Rice Krispies Oven-Fried Chicken

The Story
During the early 1940s, Kellogg's began promoting Rice Krispies not just as a breakfast cereal, but as a versatile breading agent for meats. This recipe became a staple on the side of the box, offering a way to achieve a 'fried' texture in the oven during the era of war-time rationing and later health-conscious home cooking.
Ingredients
- 1 cup Kellogg's Rice Krispies cereal, crushed to 1/2 cup
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 chicken (2 1/2 to 3 lbs), cut up
- 2 tablespoons melted butter or margarine

Preheat oven to 425°F.

Crush Rice Krispies cereal into fine crumbs.

Mix cereal crumbs, salt, and pepper in a shallow dish.

Wash chicken pieces and dry thoroughly.

Dip chicken in melted butter, then coat evenly with the cereal crumb mixture.

Place chicken in a single layer, skin side up, in a foil-lined shallow baking pan.

Bake until chicken is tender and crust is golden brown, about 45 to 50 minutes. Do not turn chicken while baking.
