Ingredients

  • 1 Pillsbury Refrigerated Pie Crust (from 14.1 oz box)
  • 2 cups cooked, mashed sweet potatoes
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 2 eggs, beaten
  • 1 cup evaporated milk
  • 1 teaspoon vanilla extract

Directions

    Preheat oven to 425°F.

    Fit pie crust into a 9-inch pie plate according to package directions; flute edges.

    In a large bowl, combine mashed sweet potatoes, sugar, salt, cinnamon, and ginger.
