Old-Fashioned Seven-Up Cake

The Story
This recipe became a mid-century staple after the 7-Up Company began promoting the soda as a baking ingredient to ensure a high rise without chemical leaveners. The carbonation and citric acid in the soda react with the batter's ingredients to create a distinctive, fine-textured crumb and a subtle citrus flavor.
Ingredients
- 1 1/2 cups butter, softened
- 3 cups granulated sugar
- 5 large eggs
- 3 cups all-purpose flour
- 2 tablespoons lemon extract
- 3/4 cup 7-Up soda
Directions

Preheat oven to 325°F (165°C) and grease and flour a 10-inch tube or Bundt pan.

In a large bowl, cream the butter and sugar together until light and fluffy.

Add eggs one at a time, beating well after each addition.

Gradually add the flour to the creamed mixture, alternating with the lemon extract.

Fold in the 7-Up soda by hand until just combined.

Pour the batter into the prepared pan and bake for 60 to 75 minutes, or until a toothpick inserted comes out clean.

Cool in the pan for 20 minutes before invertering onto a wire rack.
