Old-Fashioned Kellogg's Corn Flake Crumbs Baked Chicken

The Story
After the massive success of Corn Flakes as a breakfast cereal, Kellogg's began marketing the 'crumbs' specifically as a breading agent for dinner. This recipe was the flagship of their 'Corn-Crisped Chicken' campaign in the 1950s, promoting a healthier baked alternative to fried chicken that maintained a distinct crunch.
Ingredients
- 1 cup Kellogg's Corn Flake Crumbs
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 cup evaporated milk
- 3 lbs chicken pieces
- 2 tablespoons melted butter

Preheat oven to 350°F.

Combine Corn Flake Crumbs, salt, and pepper in a shallow dish.

Dip chicken pieces in evaporated milk, then coat thoroughly with crumb mixture.
