Old-Fashioned Corn Flakes Chicken

The Story

As post-war America shifted toward healthier cooking methods, Kellogg's introduced the 'oven-fried' method on their cereal boxes to replace heavy grease frying. This recipe became a staple of mid-century suburban dinners, offering a crunch that mimicked traditional southern fried chicken without the mess of a deep fryer.

Ingredients

  • 1 cup Kellogg's Corn Flakes cereal, crushed
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 chicken (2 1/2 to 3 lbs), cut up
  • 2 tablespoons melted butter or margarine

Directions

  1. 1

    Preheat oven to 400°F.

  2. 2

Crush Kellogg's Corn Flakes into fine crumbs and combine with salt and pepper in a shallow dish.

  3. 3

Wash chicken pieces and dry thoroughly.

  4. 4

    Brush chicken with melted butter.

  5. 5

Roll chicken pieces in the corn flake crumbs, coating evenly.

  6. 6

Place chicken pieces, skin side up, in a single layer in a shallow baking pan lined with foil.

  7. 7

Bake until chicken is tender and golden brown, about 45 to 60 minutes. Do not turn the chicken during baking.
