Marshmallow Fluff 'Never-Fail' Fudge

The Story
Commonly known as 'Fantasy Fudge' when made with Kraft Jet-Puffed, this original version appeared on the back of the Marshmallow Fluff jar in the mid-1960s. Developed by Durkee-Mower to solve the graininess common in traditional fudge, it became a staple of American holiday baking because it required no candy thermometer. The recipe is credited with helping transition Marshmallow Fluff from a regional New England sandwich spread to a national baking essential.
Ingredients
- 3 cups sugar
- 3/4 cup melted butter
- 2/3 cup evaporated milk
- 1 jar (7.5 oz) Marshmallow Fluff
- 1 package (12 oz) semi-sweet chocolate chips
- 1 tsp vanilla extract
- 1 cup chopped walnuts (optional)

Combine sugar, butter, and evaporated milk in a heavy saucepan.

Bring to a full rolling boil over medium heat, stirring constantly.

Continue boiling for 5 minutes over medium heat, or until a candy thermometer reaches 234°F, stirring constantly to prevent scorching.

Remove from heat and stir in chocolate chips until melted.

Add Marshmallow Fluff, vanilla, and walnuts; beat until smooth and well blended.

Pour into a greased 9-inch square pan.

Let cool at room temperature until firm, then cut into squares.
