Eagle Brand Magic Lemon Pie

The Story

This recipe revolutionized home baking during the Great Depression by demonstrating that the acid in lemon juice could thicken sweetened condensed milk without the need for eggs or cooking. It became a staple on the product's label for decades, marketed as a 'fail-proof' way to achieve a creamy custard consistency. It remains one of the most famous examples of chemical-reaction cooking in American culinary history.
