Eagle Brand Lemon Meringue Pie

Ingredients
- 1 (14 ounce) can Eagle Brand Sweetened Condensed Milk
- 1/2 cup lemon juice
- 1 teaspoon grated lemon rind or 1/2 teaspoon lemon extract
- 2 eggs, separated
- 1 (9 inch) baked pastry shell or graham cracker crumb crust
- 1/4 teaspoon cream of tartar
- 1/4 cup sugar

Preheat oven to 350°F.

In a medium bowl, combine Eagle Brand Sweetened Condensed Milk, lemon juice, lemon rind, and egg yolks; stir until mixture thickens.

Pour into the baked pastry shell or graham cracker crust.

In a small bowl, beat egg whites with cream of tartar until soft peaks form.
