"The authentic no-bake tropical classic."

The Story
While Key Lime Pie originated in the Florida Keys, it became a national sensation when Borden began printing the recipe on Eagle Brand cans in the 1930s. The recipe famously uses a chemical reaction between the acidic lime juice and the sweetened condensed milk to thicken the filling without requiring traditional custard cooking. It remains the definitive version of the dessert for home cooks across America.
Ingredients
- 1 (14 ounce) can Eagle Brand Sweetened Condensed Milk
- 1/2 cup Key Lime juice
- 1 teaspoon grated lime zest
- 2 egg yolks
- 1 (9-inch) graham cracker pie crust
- Whipped cream for garnish
Directions
- 1
Preheat oven to 325°F (though originally no-bake, modern food safety suggests a brief set).
- 2
In a medium bowl, whisk together the sweetened condensed milk, lime juice, lime zest, and egg yolks until smooth.
- 3
Pour the mixture into the prepared graham cracker crust.
- 4
Bake for 15 minutes or until the filling is set but still slightly jiggly in the center.
- 5
Cool at room temperature for 1 hour, then refrigerate for at least 3 hours before serving.
- 6
Garnish with whipped cream and additional lime zest if desired.
