Eagle Brand Creamy Lemon Pie

The Story
This recipe revolutionized home baking during the Great Depression by demonstrating that the acid in lemon juice could chemically thicken sweetened condensed milk without the need for eggs or heat. Often referred to as 'Magic Lemon Pie,' it became the cornerstone of Borden's marketing campaign for 'Magic Recipes' that required no cooking. It remains one of the most clipped and printed recipes in American history.
Ingredients
- 1 (14 ounce) can Eagle Brand Sweetened Condensed Milk
- 1/2 cup lemon juice
- 1 teaspoon grated lemon rind or 1/2 teaspoon lemon extract
- 2 egg yolks (optional)
- 1 (9-inch) graham cracker crumb crust or baked pastry shell

In a medium bowl, combine the sweetened condensed milk, lemon juice, and lemon rind.

Stir until the mixture thickens (if using egg yolks, whisk them in thoroughly now).
