Crown Jewel Dessert

The Story
This visually striking dessert first appeared in Jell-O marketing and packaging in the late 1950s as a way to showcase multiple flavors in one dish. It became a staple of mid-century holiday tables, eventually being rebranded under various names like 'Broken Glass Cake' or 'Stained Glass Cake' due to its translucent cubes.
Ingredients
- 1 package (3 oz.) Jell-O Strawberry flavor gelatin
- 1 package (3 oz.) Jell-O Lime flavor gelatin
- 1 package (3 oz.) Jell-O Orange flavor gelatin
- 3 cups boiling water
- 1.5 cups cold water
- 1 package (3 oz.) Jell-O Lemon flavor gelatin
- 1/4 cup sugar
- 1 cup boiling water
- 1/2 cup cold pineapple juice
- 2 cups (1 pint) heavy cream, whipped

Prepare the strawberry, lime, and orange gelatins separately, using 1 cup boiling water and 1/2 cup cold water for each. Pour each flavor into a separate shallow square pan.

Chill the three pans until firm, then cut into 1/2-inch cubes.

Dissolve the lemon gelatin and sugar in 1 cup boiling water; add the cold pineapple juice.

Chill the lemon mixture until slightly thickened, then fold in the whipped cream.

Gently fold the colored gelatin cubes into the lemon-cream mixture.

Pour into a 9-inch springform pan or a large mold and chill for at least 4 hours or until firm.

Unmold or slice directly from the pan to serve.
