Cranberry Nut Bread

The Story

This recipe first appeared on the back of Ocean Spray fresh cranberry bags in the early 1960s to encourage year-round use of the tart berries. It became so iconic that it is still printed on nearly every bag of fresh cranberries sold today. The addition of orange juice and zest perfectly balances the bitterness of the cranberries.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 cup butter or margarine, softened
  • 1 egg, beaten
  • 3/4 cup orange juice
  • 1 tablespoon grated orange peel
  • 1 1/2 cups fresh or frozen cranberries, chopped
  • 1/2 cup chopped walnuts or pecans

    Preheat oven to 350°F. Grease a 9x5-inch loaf pan.

    In a large bowl, mix together flour, sugar, baking powder, baking soda, and salt.

    Cut in the butter until the mixture is crumbly.

    Add the egg, orange juice, and orange peel; stir until just moistened.

    Fold in the chopped cranberries and nuts.

    Transfer the batter to the prepared loaf pan.

    Bake for 55 to 60 minutes or until a toothpick inserted in the center comes out clean.

    Cool in the pan for 10 minutes before removing to a wire rack to cool completely.
