Classic Grape-Nuts Pudding

The Story
This recipe first appeared on Grape-Nuts boxes during the mid-20th century, becoming a staple of New England comfort food. It gained widespread popularity because it utilized the cereal to create a self-layering texture, with a custard top and a nutty, cake-like base. It remains one of the most requested recipes in the Post brand archives.
Ingredients
- 1/2 cup Post Grape-Nuts Cereal
- 2 cups milk, scalded
- 2 eggs, slightly beaten
- 1/3 cup sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/8 teaspoon ground nutmeg
Directions

Preheat oven to 350°F.

Add Grape-Nuts cereal to scalded milk in a medium bowl.

Combine eggs, sugar, salt, and vanilla in a separate bowl; gradually add the milk and cereal mixture, stirring constantly.

Pour the mixture into a 1-quart buttered baking dish.

Sprinkle with nutmeg.

Place the baking dish in a pan of hot water (water bath).

Bake for 45 to 50 minutes, or until a knife inserted near the center comes out clean.
