Classic 7-Up Pound Cake

The Story
This recipe gained national fame in the mid-20th century when 7-Up began collaborating with home economists to showcase the soda's carbonation as a leavening agent. It originally appeared on the side of 7-Up wooden crates and later in magazine advertisements as a way to create a 'taller' and moister pound cake without using extra baking powder. It remains a staple of Southern church potlucks.
Ingredients
- 1 1/2 cups butter, softened
- 3 cups granulated sugar
- 5 large eggs
- 3 cups all-purpose flour
- 2 tablespoons lemon extract
- 3/4 cup 7-Up (room temperature)

Preheat oven to 325°F and grease and flour a 10-inch tube or Bundt pan.

Cream the butter and sugar together until light and fluffy.

Add eggs one at a time, beating well after each addition.

Gradually add the flour, alternating with the lemon extract.

Fold in the 7-Up by hand until just combined.

Pour batter into the prepared pan and bake for 1 hour to 1 hour and 15 minutes, or until a toothpick comes out clean.

Cool in pan for 20 minutes before removing to a wire rack.
