The Story

This recipe became a staple of American mid-century baking by simplifying the ingredient ratios into a memorable 1-2-3-4 sequence (1 cup butter, 2 cups sugar, 3 cups flour, 4 eggs). It was printed on the side of Swans Down Cake Flour boxes for decades as the definitive 'Standard Gold Cake' for birthdays and celebrations. The recipe helped transition home cooks from heavy nineteenth-century pound cakes to lighter, fine-crumbed sponges.

Ingredients

  • 1 cup butter, softened
  • 2 cups sugar
  • 3 cups Swans Down Cake Flour
  • 4 large eggs
  • 1 cup milk
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Directions

    Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.

    Sift the cake flour, baking powder, and salt together; set aside.

    In a large bowl, cream the butter and sugar together until light and fluffy.

    Add eggs one at a time, beating well after each addition.

    Add the flour mixture alternately with the milk, beginning and ending with the flour.

    Stir in the vanilla extract.

    Pour batter evenly into the prepared pans.
